Vegan Hudutu Soup
Hudutu (also spelled hudut) is a rich, savory coconut fish stew from the Garifuna people of Central America, primarily found in Belize, Honduras, Guatemala, and Nicaragua. This flavorful dish brings the warmth of Garifuna culture to every bowl, blending mashed green and ripe plantains with creamy coconut milk and fresh vegetables sourced directly from our Bronx Park East Farmers’ Market. Each spoonful celebrates the harmony between land and sea, connecting our local harvests with centuries-old culinary traditions.
Ingredients
- 2 (13.5 oz) cans full-fat coconut milk
- 1 medium yellow onion, minced
- 4 cloves garlic, minced
- 2 bell peppers, chopped (red and green)
- 1 bunch cilantro, chopped
- 1 tsp dried oregano
- Vegetable bouillon or broth, to taste
- Salt and black pepper, to taste
- 1 tbsp oil
Make the sere broth
- Heat oil in a large pot over medium heat. Sauté the minced onion, garlic, and bell peppers until softened, about 5–7 minutes.
- Stir in the oregano and chopped cilantro, cooking for another minute until fragrant.
- Pour in the coconut milk and 1 cup of water.
- Bring the soup to a gentle simmer, stirring occasionally to prevent the coconut milk from separating.
- Continue to simmer for 15–20 minutes, allowing the okra to soften and the flavors to meld. If the broth seems too thick, add a little more water.
- Season the broth with salt, pepper, and vegetable bouillon to taste.
